Wednesday Recipe - Meatloaf

Hello my hungry readers. This past week I made meatloaf and I have never had meatloaf and always thought that it looked awful haha. My husband likes it and I thought if I actually made it myself maybe it won't seem so bad. So I did and it was actually pretty tasty.
Ingredients:
Meatloaf:
1 cup milk, 6 bread slices, 2lbs ground beef, 1 cup of grated parmesan cheese, 1 teaspoon salt, 1/4 teaspoon seasoned salt, freshly ground black pepper, 1/4 to 1/2 cup minced flat-leaf parsley, 4 beaten eggs, 8-12 thin bacon slices
Tomato Gravy:
1 1/2 cups ketchup, 6 tablespoons brown sugar, 1 teaspoon dry mustard, dash or two of hot sauce
Directions:
1. preheat oven to 350 degrees
2. pour the milk over the bread and allow it to soak in for several minutes
3. place the ground beef, milk-soaked bread, parmesan cheese, salt, seasoned salt, black pepper, and parsley in a large mixing bowl
4. pour in the eggs
5. with clean hands, mix the ingredients until well combined
6. form the mixture into a loaf shape on the broiler pan, which will allow the fat from the meat to drain
7. they suggest always line the bottom of the broiler pan with aluminum foil to avoid having to scrub later
8. Lay bacon slices over the top, tucking them underneath the meatloaf
9. next, make the tomato gravy, pour the ketchup into a small mixing bowl
10. add the brown sugar and dry mustard and splash in the hot sauce (if you want more heat add more hot sauce)
11. stir the mixture until it is combined
12. pour 1/3 of the tomato gravy over the top of the meatloaf
13. bake for 45 minutes
14. pour another 1/3 of the tomato gravy over the meatloaf
15. bake for another 15 minutes
16. serve with the remaining tomato gravy as dipping sauce on the side
I actually enjoyed this recipe from the pioneer woman. Loves.
