Wednesday Recipe - Tomato, Pesto and Mozzarella Pizza

Hello my hungry readers. Today's Wednesday recipe is tomato, pesto and mozzarella pizza. It was so good and I was so very proud of myself for making it. This recipe is from the Pioneer Woman's cookbook, I love her recipes!
Pizza Crust
Ingredients: 1 teaspoon or 1/2 packet of active dry yeast, 4 cups of all purpose flour, 1 teaspoon of salt, 1/3cup extra virgin olive oil plus more for drizzling
Directions:
1. pour 1 1/2 cups of warm water into a bowl and sprinkle the yeast over it. Let it set.
2. combine the flour and salt in the mixer on low and slowly drizzle in the olive oil
3. stir the yeast and water mixture and slowly drizzle it into the mixer as well until you have a dough ball
4. drizzle a little olive oil in a new bowl and then put the dough ball in it
5. cover it with a damp cloth and let sit in a warm place for 1 to 2 hours or store in the fridge for up to 2 days
Pizza
Ingredients: One large tomato, mozzarella cheese whole, pesto, parmesan
6. Preheat the oven to 500 degrees
7. drizzle the pan with olive oil (pizza pan or rimmed baking sheet)
8. using your hands, stretch and press out the the dough to desired shape and size, thinner is good and finger marks in the dough make the toppings stay good
9. spread pesto on the dough
10. layer of sliced mozzarella on the pizza
11. layer tomatoes sliced on the pizza
12. top with more mozzarella and generously sprinkle with parmesan cheese
13. bake for 8 to 11 minutes until cheese is melted and golden brown.
Hope you enjoy this pizza as much as my husband and I did. Loves.
