Wednesday Recipe - Creme Brulee

Hello my starving readers! Today is Wednesday so you know I got something yummy for you! One of my all time favorite desserts is creme brulee so when I told myself I was going to do a dessert this week, why not try my favorite, and it was simpler than I thought it was going to be. 
Ingredients: 
2 cups heavy whipping cream, 1/2 cup of sugar plus a little extra for the end, 8 large egg yolks or 4 large eggs, 3/4 teaspoon of vanilla, 
You will also need: 
two small sauce pans, wooden spoon, medium mixing bowl, (4) 6oz or (6) 4oz ramekins or custard cups, a cookie sheet that has edges all the way around, kitchen torch (optional)
Directions:
1. Preheat your oven to 325.
2. In one of the small sauce pans heat the 2 cups of heavy cream almost to a simmer
3. Stir with a wooden spoon the eggs and sugar.
                                                           
4. Stir in a little bit of the cream when it is warm and stir together, slowly stir in a little bit at a time and mix in (if you don't do this a little at a time the eggs will actually start to cook and you don't want that).
                                                            
5. Stir in the vanilla

6. boil enough water to cover the bottom of the cookie sheet
7. place the ramekins on the cookie sheet and fill them with the yummy liquid you stirred up 
8. BE CAREFUL! when the oven is preheated, pull the rack out as far as you can and place the cookie sheet with ramekins on it on the rack then pour the boiling water in the bottom of the cookie sheet, don't get it in the ramekins
                                                            
9. bake 30 to 35 minutes, or until the custard is set and the center is bit quivery when it moved
                                                            
10. take out and place on the counter or somewhere where they can come to room temperature, then cover and place in fridge and allow to cool for 8 hours or up to 2 days
                                                     
11. when your ready to serve them, take a little bit of sugar and coat the top of each one lightly and use the kitchen torch CAREFULLY!! and caramelize the sugar on top so it gets hard or if you don't have a kitchen torch you can put the ramekins under the broiler in the oven for a couple minutes (watch them!) until they get golden brown on top
                                                          
12. ENJOY!! 
I made whip cream with the left over heavy whipping cream I had to go top of mine. I just put the cream, vanilla and little bit of sugar in the mixer with the whisk attachment and just turned it on and let it run until it made stiff peaks. Hope you enjoy this yummyness! Loves!
