Wednesday Recipe - Chili and Cornbread

Hello my hungry readers! I have a really good crock pot recipe to share with you guys today. And of course you have to have corn muffins with chili. 
Ingredients: 1 pound of lean ground beef, 1 medium onion chopped, 2- 14.5 oz cans of diced tomatoes undrained, 1- 15 oz can of black beans drained, 1/2 cup of prepared salsa, 1 tablespoon of chili powder, 1 1/2 teaspoons of ground cumin, salt and pepper to taste

What you need: pan to cook beef, knife and cutting board to cut up onion, crock pot
Directions:
1. Cook ground beef and chopped onion together until beef is cooked all the way through
2. Put the beef mixture, 2 cans of undrained tomatoes, 1 can of drained beans, salsa, chili powder, cumin and salt and pepper in the crock pot and stir together
3. Set crock pot on Low for 4 1/2 - 5 hours
4. Top finished chili with shredded cheese or onions or olives, anything you would like :-)
 For the corn muffins I just used the recipe on the box of corn meal.
